There is nothing like an abundant garden harvest of tomatoes in summer.

Whether you grow your own garden and can harvest them yourself, or purchase them at a farmer’s market, summer sun ripened tomatoes taste so much better than the ordinary ones we have access to in winter.

There are so many wonderful recipes to use your garden harvest of tomatoes. One of our favorite ways is simple and delicious – Sicilian Bruschetta.

Bruschetta

Whether you are serving bruschetta as a side or appetizer is up to you. This recipe is sure to delight, it is simple to make and delicious to eat. How could you go wrong?!?!

Sicilian Bruschetta

Ingredients:

  • 8 slices of bread
  • 4 tomatoes
  • 1 pepper
  • 1 red onion
  • Pecorino cheese
  • Extra virgin olive oil
  1. Preheat your oven to 400 degrees.
  2. Slice the onion, tomatoe and pepper and lightly saute them in olive oil.
  3. Top the bread with the onion, tomato and pepper combination.
  4. Add pecorino cheese and toast in the oven for 10-15 minutes.
  5. Drizzle with olive oil.
  6. Enjoy!

This recipe is wonderful as written, but you can also add a bit of balsalmic vinegar to your drizzle to mix it up a bit. We also love the addition of basil if you need a variation.
